CYCLOTHERMIC Style V600 deck ovens

DESCRIPTION

Four Cyclotherme Style X24

Four fixed deck 2 channels of 600 mm:
• 2 doors per floor / 4 floors
• 3 depths: 1600, 2000, 2500 mm
• 3 floors of 170 mm and the 4th superior 30mm
Exists in natural gas, propane and fuel oil.

 

 

Reactivity, energy saving and recycling

The operating principle of range ovens CYCLOTHERMIC is based on a cross-flow and continuous hot pressurized flue gases around the cooking chambers.
The large volume of smoke and recycled (3300-4800 m³ / h per m² of sole) provides exceptional responsiveness in terms of temperature rise.
The start-up time to reach cooking temperature increased from 1:15 to 60 minutes, with a gradient of more than 4ºC per minute, resulting in gains in energy efficiency.
The direct heating of the boxes by fumes provides excellent performance.
The recycling loop smoke guarantees the quality of exchanges.
The use of a turbine enables to increase the speed of the fumes and homogenize their temperature.
The fireplace combustion fumes is perfectly secure and waterproof.

 

Energy saving

The set temperature is reached in just 1 hour, against 1:40 for a competitor oven.

 

Cooking Quality

The steam unit is located in the smoke circuit, near the fireplace to ensure significant mist production.
The steam generation system is independent for each stage.
The vapors of the controls are located on each side of the furnace.
The exhaust stack of steam is independent and perfectly sealed.
Thermal insulation is enforcée by rock wool rolls between 90 and 150 mm thick, the cooking quality is thus optimized.

 

A built-in oven and practice

The oven CYCLOTHERMIC Style X24 is perfectly Built on 3 sides to maximize the workspace in the bakery. The servicing or maintenance taking place from the front and top of the oven.

 

Temperature regulation

Each stage is equipped with its own probe, the temperature of the entire furnace is controlled on the average of 4 floors.

 

Compact ground

With a width of 1850 mm and a cooking surface of up to 12m², the place in the bakery is optimized to the maximum
