The BERTRAND-PUMA fork mixers with fixed-bracked bowl are meant for the mixing of traditional bread dough, speciality bread dough, croissants dough, milk bread dough, pizza dough, etc.
Mixing Quality
PAO fork mixers knead gently, respecting the crucial stages required for perfect and soft oxygenation of the dough (stretching, cutting, breathing) without overheating.
These results are obtained thanks to the specific mixing tool developed by Bertrand-Puma, called the “spiral fork” or “gazelle horn”.

Sturdy, Long-Lasting Mixers
PAO fork mixers are made from solid and time-resistant materials. The frame and column are made in very thick mechanically-welded steel and the moulded aluminium mixing tool is mounted on a 60 mm diameter chrome-plated steel axis guaranteeing extreme toughness.
The controls are protected by two metal reinforcements to avoid ripping the buttons.
Ergonomic and Functional Mixers
Benefiting from a long tradition, PAO range fork mixers are both ergonomic and functional.
For example, a single lever is needed to manoeuvre the head of the mixer. The removal of the tool from the dough and locking of the head in working position is achieved in one single, effortless movement.
Adjustable legs guarantee stability of the mixer even on an uneven floor.
A small flap fitted into the protection cover is used to add ingredients during mixing or to have a direct view of the state of the dough.
The loading height of the bowl is designed to reduce movements and non-ergonomic positions.

Stop Flour Dust
Almost one quarter of bakers suffer from asthma, mainly caused by suspended flour dust.
The initial slow mixing is therefore particularly dangerous for your bronchial tubes as it releases these particles into the atmosphere. That is why the PAO mixer range includes a protection cover ; this cover guarantees that volatile dust will remain in the bowl.
